It’s been a while since I blogged about anything. It’s not that I haven’t created or enjoyed some amazing dishes. It’s just I haven’t felt like I could write about anything and it be interesting.  I guess everyone goes through a phase writing blogs and creating recipes when the creative juices just aren’t flowing. During my hiatus I had an epiphany.  I decided I will post dishes and recipes most everyday. They will be simple posts.  Just a day in the life of a cook in her kitchen.

So….A new concept at Challengeu2cook.  Nothing fancy and nothing wordy.  Just plain and simple recipes.  Some will be my creation and some will be from other blogs, friends, and tried and true recipes.

Chewy Butterscotch Brownies
2 1/2 cups all-purpose flour
1tsp. baking powder
1/2 tsp. salt
1 cup (2sticks) butter softened
1 3/4 cups packed brown sugar                                                                     
1 TBSP. pure vanilla extract
2 large eggs
1 2/3 cups (11ounce package) butterscotch morsels, divided
Preheat oven to 350 degrees.
Combine flour, baking powder, and salt in a medium bowl.  Beat butter, brown sugar, and vanilla in a large bowl until creamy.  Beat in eggs.  Gradually beat in flour mixture.  Stir in 1 cup morsels.
Spread into a ungreased 9×13 baking pan.  Sprinkle with remaining 2/3 cup morsels. 
Bake for 30 to 40 minutes or until tester comes out clean. Cut into bars.
