Rufus' Food and Spirits Guide

This is another simple meal that does not require a completely working kitchen to accomplish.

Pasta Salad with Mushrooms and Olives

  • 1 lb small shaped pasta
  • 1/2 onion diced fine
  • 10-12 assorted olives pitted and chopped roughly
  • 8 mushrooms sliced thick
  • 3 anchovy filets
  • 1 tsp cayenne pepper
  • 1 tbsp dried oregano
  • 4 oz feta cheese
  • 2 tbsp balsamic vinegar
  • Olive oil
  • Salt/pepper
  • 1 tbsp butter

Boil pasta in salted water until al dente. Drain and place pasta in a bowl and drizzle with olive oil. Place anchovies and butter in a frying pan over medium heat and saute, breaking up the fish to a paste. Add onion and cook until golden. Add mushrooms and cook until browned. Add balsamic and deglaze pan. Cook until evaporated then spoon into pasta. Add feta, olives and spices and stir well. Taste for seasoning and add more oil if necessary. Serve warm or…
